Description

Triple Layer Fudgy Mint Oreo Brownies are an indulgent, multi-textured dessert with a rich chocolate brownie base, a fluffy mint marshmallow frosting, and a crushed Mint Oreo topping. Perfect for holidays, parties, or any time you’re craving a minty, chocolatey treat.

  • 8+ drops green food coloring
  • 4 oz baking chocolate (about 9 squares of 72% dark chocolate)
  • 3/4 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed espresso or coffee (optional)
  • 1 cup all-purpose flour
  • 12 Cool Mint Oreo Cookies, hand-crumbled (for brownie layer)
  • 1/2 cup butter or margarine, softened
  • 3 to 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 tablespoon milk (as needed for frosting consistency)
  • 3/4 cup white chocolate chips, melted
  • 18 Cool Mint Oreo Cookies, hand-crumbled (for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with foil and spray with nonstick spray.
  2. In a medium bowl, mix marshmallow fluff, mint extract, and green food coloring until light green. Set aside.
  3. In a large microwave-safe bowl, melt the chocolate and butter together (about 90 seconds), then stir until smooth.
  4. Stir in granulated sugar until combined (mixture will be grainy).
  5. Add eggs and vanilla extract, then optional coffee, and mix well.
  6. Fold in flour until just combined. Do not overmix.
  7. Fold in 12 hand-crumbled Mint Oreos.
  8. Pour batter into prepared pan. Drop 1/2 cup of the mint marshmallow mixture over the batter and swirl with a knife.
  9. Bake for 23–25 minutes or until set. Cool completely (1 hour or chill for 10 minutes in freezer).
  10. While cooling, prepare the frosting: Beat softened butter with powdered sugar, vanilla extract, and milk until fluffy.
  11. Melt white chocolate chips in a microwave-safe bowl (30-second intervals).
  12. Combine frosting, melted white chocolate, and remaining mint marshmallow mixture. Add more food coloring if needed.
  13. Spread frosting over cooled brownies evenly.
  14. Top with 18 hand-crumbled Mint Oreos, pressing gently into the frosting.
  15. Chill until the top layer is firm before slicing and serving.

Notes

  • Do not add more mint extract than specified to avoid overpowering flavor.
  • Brownies are best chilled and can be stored in the fridge for up to 10 days or frozen for 6 months.
  • You can substitute store-bought brownie mix and frosting to save time.
  • Use regular Oreos if Mint Oreos are unavailable and add a bit more mint extract to the filling.
