Ingredients
Scale
- 1 cup butter: softened to create a rich and tender cookie texture
- 1 cup brown sugar: adds sweetness and moisture with a caramel-like flavor
- 1 cup pumpkin puree: provides moisture and classic pumpkin flavor
- 1 large egg: helps bind the cookie dough ingredients together
- 2 cups all-purpose flour: forms the structure of the cookie cups
- 1 teaspoon baking powder: helps the cookies rise slightly
- 1 teaspoon baking soda: improves cookie texture and softness
- 2 teaspoons pumpkin pie spice: adds warm fall flavors
- 1 cup mini chocolate chips: adds chocolate flavor throughout the cookie base
- 24 Rolo candies: create the melted caramel chocolate filling
- 24 pecan halves: add crunch and complete the turtle candy flavor
Instructions
- Preheat the oven to 350°F and lightly grease a mini muffin tin.
- Beat softened butter, brown sugar, and pumpkin puree together until smooth and well combined.
- Add the egg and mix until fully incorporated.
- Mix in flour, baking powder, baking soda, and pumpkin pie spice until a soft dough forms.
- Fold mini chocolate chips into the pumpkin cookie dough.
- Scoop about one tablespoon of dough into each mini muffin cavity.
- Bake for approximately 10 minutes until the edges are set and the centers remain soft.
- Immediately press a tablespoon into the center of each warm cookie to create a cup shape.
- Place one Rolo candy into each cookie cup and return to the oven for about 90 seconds to soften the caramel chocolate.
- Press a pecan half into each melted Rolo and allow the cookie cups to cool completely before serving.
Notes
- Use pure pumpkin puree instead of pumpkin pie filling for the best texture and flavor.
- Shape the cookie cups while they are still warm because they become firmer as they cool.
- Store cooled Turtle Pumpkin Cookie Cups in an airtight container for up to 5 days.
- Walnuts or almonds can be used instead of pecans for a different nutty flavor.
- Do not overbake the cookie cups to keep them soft and tender.
