Description

These Valentine’s Day cookies are soft, buttery, and perfectly shaped for decorating with royal icing. Inspired by conversation hearts, they’re a festive, customizable treat ideal for gifting, parties, or family baking fun.

  • 3/4 cup (150g) granulated sugar: sweetens and helps create soft crumb
  • 1 large egg, at room temperature: binds ingredients and provides structure
  • 2 teaspoons pure vanilla extract: classic sugar cookie flavor
  • 1/4 to 1/2 teaspoon almond extract (optional): adds a nutty aroma
  • 4 cups (480g) confectioners’ sugar, sifted: base for royal icing
  • 3 tablespoons meringue powder: stabilizes royal icing
  • 910 tablespoons water (room temperature): adjusts icing consistency
  • Gel food coloring: used to tint icing in pastel shades and red for writing


Instructions

  1. Whisk flour, baking powder, and salt in a bowl. Set aside.
  2. In a large bowl, cream the butter and sugar together on high speed for 3 minutes until smooth and creamy.
  3. Add egg, vanilla, and almond extract. Beat on high speed until combined.
  4. Add dry ingredients to wet and mix on low until combined. If dough is sticky, add 1 tablespoon flour.
  5. Divide dough in half. Roll each half to 1/4-inch thickness between parchment or silicone mats.
  6. Layer the rolled dough with parchment in between, wrap, and refrigerate for at least 2 hours.
  7. Preheat oven to 350°F (177°C). Line baking sheets with parchment or silicone mats.
  8. Cut dough with heart-shaped cookie cutter. Re-roll scraps and repeat.
  9. Place cookies 3 inches apart on baking sheets. Bake for 11–12 minutes until edges are lightly golden.
  10. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  11. To make icing, beat confectioners’ sugar, meringue powder, and 9–10 tbsp water on high for 2 minutes until icing smooths in 5–10 seconds when drizzled.
  12. Divide icing into bowls. Tint with pastel colors. Fill piping bags fitted with tip #4.
  13. Outline and flood cookies with pastel icing. Let set for at least 2 hours.
  14. Use red icing in piping tip #2 to write messages. Allow to dry for 2–3 more hours before serving or storing.

Notes

  • Roll dough before chilling to make handling easier.
  • Use gel food coloring for vibrant color without thinning the icing.
  • If icing is too thick, add water 1 tbsp at a time. If too thin, beat longer or add sugar.
  • Decorated cookies freeze well for up to 3 months once icing is set.
  • Chilling the dough is essential to maintain cookie shapes during baking.
