Description

Vanilla Bean Yogurt Nectarine Parfaits with Candied Nuts are a light and refreshing layered dessert made with creamy vanilla bean yogurt, sweet nectarines tossed with lemon juice and sugar, and crunchy candied nuts. Perfect for breakfast, brunch, snacks, or a healthy summer dessert.

Ingredients

Scale
  • 4 (4-ounce) containers vanilla bean yogurt
  • 2 medium nectarines, diced
  • 1 tablespoon fresh lemon juice (from 1/2 lemon)
  • 1 tablespoon granulated sugar
  • 1/2 cup candied nuts, chopped

Instructions

  1. Wash, pit, and dice the nectarines into small bite-sized pieces.
  2. Place the diced nectarines in a bowl and add the lemon juice and granulated sugar.
  3. Toss gently until the fruit is evenly coated.
  4. Cover and refrigerate the nectarine mixture for 10 minutes to allow the flavors to develop.
  5. Spoon a layer of nectarines into the bottom of four serving glasses.
  6. Add a layer of vanilla bean yogurt over the fruit.
  7. Repeat the layers of nectarines and yogurt until the glasses are filled.
  8. Finish with a final layer of yogurt.
  9. Top each parfait with chopped candied nuts.
  10. Serve immediately while chilled and enjoy.

Notes

  • Use ripe but firm nectarines for the best texture.
  • Peaches, strawberries, or raspberries can be substituted for nectarines.
  • Add the candied nuts just before serving to maintain their crunch.
  • Greek yogurt may be used for a thicker and higher-protein parfait.
  • Parfaits can be assembled up to 24 hours ahead, but store nuts separately.
