Instructions
- Wash, pit, and dice the nectarines into small bite-sized pieces.
- Place the diced nectarines in a bowl and add the lemon juice and granulated sugar.
- Toss gently until the fruit is evenly coated.
- Cover and refrigerate the nectarine mixture for 10 minutes to allow the flavors to develop.
- Spoon a layer of nectarines into the bottom of four serving glasses.
- Add a layer of vanilla bean yogurt over the fruit.
- Repeat the layers of nectarines and yogurt until the glasses are filled.
- Finish with a final layer of yogurt.
- Top each parfait with chopped candied nuts.
- Serve immediately while chilled and enjoy.

- Peaches, strawberries, or raspberries can be substituted for nectarines.
