- 1/2 cup milk
- 1/4 cup canola oil
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 2 teaspoons vanilla chai spice blend
- 1/2 teaspoon salt
- 1 tablespoon coarse sanding sugar (optional, for topping)
Instructions
- Preheat your oven to 400°F (200°C). Grease a 6-well muffin pan or line with paper liners.
- In a large mixing bowl, whisk together the egg, milk, and canola oil until well combined.
- Add the flour, sugar, baking powder, vanilla chai spice blend, and salt to the wet ingredients.
- Stir gently until just combined. Do not overmix to avoid dense muffins.
- Divide the batter evenly between the 6 muffin cups using a cookie scoop or spoon.
- Sprinkle each muffin with coarse sanding sugar if desired.
- Bake for 18–20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep muffins tender and fluffy.
- To intensify chai flavor, steep chai tea bags in the milk before mixing.
- Muffins can be frozen individually wrapped for up to 3 months.
- Make your own chai spice with 1/2 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cardamom, 1/4 tsp allspice.
