Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a stand mixer, beat 1/2 cup softened butter until smooth. Add eggs and 1 tablespoon vanilla extract; mix until combined.
- Gradually add the cake mix and mix until a soft dough forms. Add green food coloring and mix until evenly colored.
- Using a 1-tablespoon scoop, place cookie dough balls onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 8–10 minutes. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- To make the filling, beat 1/2 cup softened butter and 8 oz marshmallow cream together until fluffy.
- Add 1 tsp vanilla extract and 1/2 tsp mint extract; mix well.
- Gradually beat in 2 1/2 cups powdered sugar. Stir in 1 tablespoon milk until the filling is smooth and spreadable.
- Transfer filling to a piping bag or zip-top bag. Pipe frosting onto the flat side of half the cookies.
- Top with remaining cookies to form sandwiches. Serve and enjoy!
