Description

  • 1/2 cup clarified butter or cooking oil: for frying the cutlets to golden brown
  • 1/2 tsp salt: enhances flavor
  • 1/4 tsp black pepper: adds a touch of heat
  • 1/2 lemon, cut into wedges: served on the side for brightness


Instructions

  1. Prepare the breading station: place flour on one plate, beaten eggs in a shallow bowl, and breadcrumbs on another plate.
  2. Season the veal cutlets with salt and pepper on both sides.
  3. Dredge each cutlet in flour, shaking off excess, then dip into the beaten eggs, and finally coat evenly with breadcrumbs.
  4. Preheat the oven to 200°F (95°C) to keep cooked cutlets warm.
  5. Heat clarified butter or oil in a large skillet over medium-high heat until hot (about 375°F/190°C).
  6. Fry the cutlets in batches for 3–4 minutes per side, or until golden brown and crispy. Do not overcrowd the pan.
  7. Transfer cooked cutlets to a wire rack over a baking sheet and place in the oven to keep warm while frying the remaining pieces.
  8. Serve immediately with lemon wedges on the side.
