- 2 Yukon Gold potatoes, peeled and chopped
- 6-8 tablespoons vegan butter, room temperature
- 2 tablespoons full-fat coconut milk (can substitute with more vegan butter)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 large yellow onion, thinly sliced
- 2 tablespoons vegan butter or oil for caramelizing onions
- Fresh thyme for garnish (optional)
Instructions
- Peel and chop potatoes into large chunks, then rinse to remove excess starch.
- Place potatoes in a large pot and cover with cold water. Add salt and bring to a boil. Cook for 15-20 minutes until tender and easily pierced with a fork.
- While the potatoes cook, melt vegan butter or oil in a pan over low heat. Add sliced onions and cook, stirring frequently, for 20-40 minutes until they are golden brown and caramelized. Season with salt and pepper.
- Once the potatoes are cooked, drain and return them to the pot. Mash the potatoes with a potato masher while they are still hot.
- Add vegan butter and coconut milk to the mashed potatoes and continue mashing until smooth with a few lumps remaining.
- Season the mashed potatoes with garlic powder, salt, and pepper. Add fresh thyme if using.
- Gently fold in the caramelized onions and serve warm.
