- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp ground cinnamon (for crust)
- 1/4 cup organic cane sugar or brown sugar
- 1/4 tsp salt
- 1/3 cup unsweetened plant-based milk
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/4 cup melted coconut oil or neutral vegetable oil
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease and line an 8-inch square baking pan with parchment paper.
- Place the dried figs in a saucepan with enough water to cover them. Simmer for about 5 minutes until softened, then drain.
- Add the softened figs, Medjool dates, maple syrup, lemon juice, and cinnamon to a food processor. Blend until smooth and spreadable.
- In a large bowl, whisk together the oat flour, rolled oats, baking powder, cinnamon, sugar, and salt.
- In a separate bowl, combine the plant-based milk, applesauce, vanilla extract, and melted oil.
- Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.
- Press half of the dough evenly into the prepared baking pan.
- Spread the fig filling evenly over the bottom crust.
- Crumble or gently press the remaining dough over the filling to create the top layer.
- Bake for 30 to 35 minutes, or until the top is lightly golden and set.
- Allow the bars to cool completely before slicing into squares.
- Serve immediately or store in an airtight container for later.
