  • 1/2 tsp freshly ground black pepper (or to taste)
  • 1/2 to 1 tsp dried or fresh rosemary, thyme, garlic powder, or Italian herb blend (optional, to taste)
  • Fresh chopped parsley, thyme, or sage (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Peel the butternut squash using a vegetable peeler. Slice it in half lengthwise, then scoop out the seeds. Cut the squash into 1-inch cubes, trying to keep them uniform for even roasting.
  3. In a large bowl, toss the butternut squash cubes with avocado oil, cinnamon, maple syrup (if using), sea salt, black pepper, and any additional herbs or spices you desire.
  4. Spread the seasoned squash cubes in a single layer on the prepared baking sheet, making sure not to overcrowd the pan. Roast for 30-35 minutes, flipping the pieces halfway through the cooking time. Roast until golden brown and caramelized at the edges.
  5. Once roasted, transfer the squash to a serving dish and garnish with freshly chopped parsley, thyme, or sage. Optionally, drizzle a little maple syrup on top for an extra touch of sweetness.
