- 1 medium yellow squash, sliced into thick rounds
- 1/4 cup olive oil

- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a small bowl, whisk together the olive oil, lemon juice, Italian seasoning, garlic powder, salt, and black pepper until well combined.
- Wash and prepare all vegetables by cutting the peppers and onion into 1-inch pieces and slicing the zucchini and yellow squash into thick rounds.
- Thread the mushrooms, cherry tomatoes, bell peppers, onion, zucchini, and yellow squash onto skewers, alternating vegetables for color and even cooking.
- Brush the prepared marinade generously over all sides of the vegetable skewers.
- Preheat a grill to medium-high heat.
- Place the vegetable kabobs on the grill and cook for 3 to 5 minutes per side, turning carefully until the vegetables are lightly charred and tender.
- Remove from the grill once the vegetables reach your desired tenderness.
- Serve immediately as a side dish or vegetarian main course.
