Description

Vegetable Kabobs are a healthy and flavorful grilled side dish made with fresh mushrooms, cherry tomatoes, bell peppers, red onion, zucchini, and yellow squash. Tossed in a simple lemon herb marinade and grilled until tender, these colorful vegetable skewers are perfect for summer cookouts, barbecues, and easy weeknight meals.

  • 2 cups cremini mushrooms
  • 1 cup cherry tomatoes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick rounds
  • 1 medium yellow squash, sliced into thick rounds
  • 1/4 cup olive oil
  • 1 lemon, juiced (about 2 tablespoons lemon juice)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. In a small bowl, whisk together the olive oil, lemon juice, Italian seasoning, garlic powder, salt, and black pepper until well combined.
  2. Wash and prepare all vegetables by cutting the peppers and onion into 1-inch pieces and slicing the zucchini and yellow squash into thick rounds.
  3. Thread the mushrooms, cherry tomatoes, bell peppers, onion, zucchini, and yellow squash onto skewers, alternating vegetables for color and even cooking.
  4. Brush the prepared marinade generously over all sides of the vegetable skewers.
  5. Preheat a grill to medium-high heat.
  6. Place the vegetable kabobs on the grill and cook for 3 to 5 minutes per side, turning carefully until the vegetables are lightly charred and tender.
  7. Remove from the grill once the vegetables reach your desired tenderness.
  8. Serve immediately as a side dish or vegetarian main course.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  • Cut vegetables into similar sizes to ensure even cooking.
  • Allow the vegetables to marinate for 15 to 30 minutes for additional flavor.
