This Vegetarian Italian Chopped Salad is a fresh and flavorful Mediterranean-inspired salad packed with crisp romaine lettuce, radicchio, chickpeas, tomatoes, cucumbers, olives, mozzarella, and a zesty homemade Italian dressing. Perfect as a healthy lunch, side dish, or light dinner, this chopped salad is colorful, satisfying, and easy to customize.

Ingredients

Scale
  • 1 large head romaine lettuce, chopped
  • 2 cups radicchio, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup sliced black olives
  • 1/3 cup sliced pepperoncini peppers
  • 1 cup mozzarella cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and thoroughly dry the romaine lettuce and radicchio, then chop them into bite-sized pieces and place them in a large salad bowl.
  2. Add the cherry tomatoes, diced cucumber, sliced red onion, chickpeas, olives, and pepperoncini peppers to the bowl.
  3. Fold in the mozzarella cheese, Parmesan cheese, and chopped parsley.
  4. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and black pepper until fully combined.
  5. Pour the homemade Italian dressing over the salad just before serving.
  6. Toss the Vegetarian Italian Chopped Salad thoroughly to evenly coat all ingredients with dressing.
  7. Taste and adjust seasoning if needed, then serve immediately for the freshest flavor and texture.

Notes

  • Keep the dressing separate until serving to prevent the salad from becoming soggy.
  • Chop all ingredients into similar sizes for the best chopped salad texture.
  • Use freshly grated Parmesan cheese for the best flavor.
  • Add avocado, white beans, or quinoa for extra protein and texture.
  • This salad can be stored in the refrigerator for up to 2 days.
