Description

This Virgin Strawberry Pina Colada is a creamy tropical mocktail made with fresh strawberries, pineapple juice, coconut milk, and ice blended into a refreshing frozen drink. Perfect for summer gatherings, pool parties, and family-friendly entertaining, this alcohol-free lava flow drink combines fruity sweetness with rich coconut flavor in every sip.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled
  • 1 cup pineapple juice, divided
  • 2 tablespoons brown sugar
  • 2 cups fresh pineapple chunks
  • 1 cup coconut milk
  • 3 cups ice cubes
  • 1/2 cup frozen strawberries (optional for thicker texture)
  • 1/2 cup frozen pineapple chunks (optional)
  • 2 fresh strawberries for garnish
  • 2 pineapple wedges for garnish

Instructions

  1. Add the fresh strawberries, 1/4 cup pineapple juice, and brown sugar to a blender. Blend until smooth to create the strawberry layer.
  2. Pour the strawberry mixture into a separate container and rinse the blender thoroughly.
  3. Add the pineapple chunks, remaining pineapple juice, coconut milk, and ice cubes to the blender.
  4. Blend until creamy and slushy. Add frozen pineapple or strawberries if you prefer a thicker consistency.
  5. Pour the strawberry mixture into the bottom of serving glasses until about one-quarter full.
  6. Slowly pour the pina colada mixture over the strawberry layer to create a tropical lava flow effect.
  7. Garnish each Virgin Strawberry Pina Colada with fresh strawberries and pineapple wedges.
  8. Serve immediately while cold and frozen.

Notes

  • Use frozen fruit instead of extra ice for a creamier texture.
  • Adjust sweetness depending on the ripeness of the strawberries and pineapple.
  • Chill serving glasses before pouring for a longer-lasting frozen texture.
  • For a richer tropical flavor, substitute cream of coconut for coconut milk.
  • This recipe is naturally dairy-free and vegetarian.
  • Serve immediately for the best slushy consistency.
