  • 1/3 cup melted unsalted butter
  • 1 teaspoon cinnamon

  • 1/3 cup maple syrup
  • 2 tablespoons chopped walnuts
  • 1 teaspoon thyme
  • 1/2 teaspoon cinnamon


Instructions

  1. Clean and slice the sweet potatoes into 1/2-inch thick rounds. You can leave the skin on or peel it, based on your preference.
  2. Preheat the oven to 400°F (200°C).
  3. In a large bowl, toss the sweet potatoes with melted butter, cinnamon, salt, and pepper until evenly coated.
  4. Arrange the sweet potato slices on a baking tray in a single layer. Bake for 25-30 minutes, or until the sweet potatoes are fork-tender.
  5. In a small bowl, mix together the maple syrup, chopped walnuts, cinnamon, and thyme.
  6. Remove the sweet potatoes from the oven and top each slice with about 1 teaspoon of the maple-walnut mixture.
  7. Return the tray to the oven and bake for another 8-10 minutes, or until the topping is caramelized.
  8. Serve immediately. Optionally, top with feta cheese before serving for added flavor.
