- 1 tablespoon (15g) Dijon mustard
- 1 tablespoon (15ml) red wine vinegar
- 1 tablespoon (15ml) fresh lemon juice
- 1 clove garlic, minced
- 1/4 cup (15g) fresh parsley, chopped
- 2 tablespoons (8g) fresh dill, chopped
- 2 tablespoons (6g) fresh chives, chopped
- 1/2 teaspoon (3g) salt, or to taste
- 1/4 teaspoon (1g) black pepper, or to taste
Instructions
- Place the halved baby potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat.
- Reduce heat to a simmer and cook for 10–12 minutes, or until the potatoes are fork-tender but not mushy.
- Drain the potatoes well and let them sit briefly to release excess moisture while still warm.
- In a large mixing bowl, whisk together olive oil, Dijon mustard, red wine vinegar, lemon juice, and minced garlic until smooth.
- Add the warm potatoes to the bowl and gently toss to coat evenly with the dressing.
- Add chopped parsley, dill, and chives, then toss lightly to distribute the herbs.
- Season with salt and black pepper to taste, adjusting as needed.
- Transfer to a serving dish and serve warm or at room temperature.
