Description

This Warm Mixed Herb Potato Salad is a light, flavorful side dish made with tender baby potatoes, fresh herbs, and a tangy Dijon vinaigrette. Perfect for serving warm or at room temperature, it’s a healthy and refreshing twist on classic potato salad.

Ingredients

Scale
  • 2 pounds (900g) baby potatoes, halved
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15g) Dijon mustard
  • 1 tablespoon (15ml) red wine vinegar
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 cup (15g) fresh parsley, chopped
  • 2 tablespoons (8g) fresh dill, chopped
  • 2 tablespoons (6g) fresh chives, chopped
  • 1/2 teaspoon (3g) salt, or to taste
  • 1/4 teaspoon (1g) black pepper, or to taste

Instructions

  1. Place the halved baby potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat.
  2. Reduce heat to a simmer and cook for 10–12 minutes, or until the potatoes are fork-tender but not mushy.
  3. Drain the potatoes well and let them sit briefly to release excess moisture while still warm.
  4. In a large mixing bowl, whisk together olive oil, Dijon mustard, red wine vinegar, lemon juice, and minced garlic until smooth.
  5. Add the warm potatoes to the bowl and gently toss to coat evenly with the dressing.
  6. Add chopped parsley, dill, and chives, then toss lightly to distribute the herbs.
  7. Season with salt and black pepper to taste, adjusting as needed.
  8. Transfer to a serving dish and serve warm or at room temperature.

Notes

  • Always dress the potatoes while warm to help them absorb maximum flavor.
  • Avoid overcooking to prevent a mushy texture.
  • Use fresh herbs for the best aroma and taste.
  • Let the salad sit for 10 minutes before serving to enhance flavor blending.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
