Description
Watermelon Feta Salad is a refreshing summer dish that combines juicy watermelon, creamy feta cheese, fresh herbs, and a light citrus dressing for a perfect balance of sweet, salty, and tangy flavors.
Ingredients
Scale
- 4 cups watermelon (cubed, seedless)
- 1 cup feta cheese (crumbled)
- 1 cup cucumber (diced)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh mint leaves (chopped)
- 2 tbsp fresh basil (optional, chopped)
- 2 tbsp olive oil
- 1 tbsp lime juice (freshly squeezed)
- 1/4 tsp black pepper
- 1/8 tsp salt (adjust to taste)
Instructions
- Cut the watermelon into bite-sized cubes and chill in the refrigerator for 15โ20 minutes.
- Soak the sliced red onion in cold water for 5โ10 minutes to reduce sharpness, then drain.
- Dice the cucumber and chop the mint and basil.
- In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
- In a large bowl, combine watermelon, cucumber, red onion, and herbs.
- Drizzle the dressing over the salad and gently toss to combine.
- Sprinkle crumbled feta cheese on top and lightly mix.
- Chill for an additional 10 minutes before serving for best flavor.
Notes
- Use ripe, sweet watermelon for the best flavor.
- Add feta just before serving to keep its texture intact.
- Keep dressing separate if making ahead to avoid excess moisture.
- Optional: drizzle balsamic glaze for extra depth of flavor.
- Serve chilled for maximum freshness and taste.
