Description

  • 5 Low carb, high fiber tortilla wraps
  • 12 ounces 96% lean ground beef
  • ½ cup chopped onion
  • Salt to taste
  • Ground black pepper to taste
  • 8 teaspoons mustard
  • 4 ounces reduced-fat shredded cheddar cheese
  • 1 cup chopped fresh tomatoes
  • 8 teaspoons dill gherkins, finely chopped
  • 1 cup chopped lettuce


Instructions

  1. Preheat a large cast-iron skillet over medium-high heat. Cut 1 tortilla wrap into quarters and arrange them in the pan. Toast the quarters for 1 minute on each side and set them aside to cool to room temperature.
  2. Preheat a large nonstick skillet over medium-high heat and spray with cooking spray. Add ground beef, onion, salt, and pepper. Cook until the beef is browned and the onion is tender, about 5 minutes. Set aside to cool slightly.
  3. Preheat the cast-iron skillet again. Spray one side of a tortilla wrap with cooking spray and spread 1 teaspoon of mustard over the center. Spoon about ½ cup of the beef mixture into the center, leaving a 1½-inch border.
  4. Layer ¼ cup of shredded cheddar cheese, ¼ cup of chopped tomatoes, 2 teaspoons of finely chopped pickles, and ¼ cup of chopped lettuce over the beef mixture.
  5. Place one toasted tortilla quarter on top and fold the sides of the tortilla inward to form pleats that cover the toasted tortilla. Carefully flip the wrap and place it in the skillet. Toast the wrap for 2 minutes on each side, pressing down occasionally with a spatula. Repeat for the remaining wraps.

Notes

  • Leftovers can be stored in the refrigerator for up to 2 days. Reheat by toasting in a skillet for best results.
  • For a spicier version, add jalapeños or hot sauce to the beef mixture.
  • If you’re avoiding gluten, opt for gluten-free tortillas to maintain the crispy texture.
