Instructions
- Preheat the oven to 450°F and prepare an 11×7-inch or 2-quart baking dish.
- Melt the butter in a large skillet over medium heat.
- Add the sliced zucchini, yellow squash, and shallots. Season with salt and black pepper, then cook for 4 to 6 minutes, stirring occasionally, until the vegetables begin to brown and become crisp-tender.
- Add the minced garlic and cook for 1 minute, stirring frequently.
- Pour in the heavy whipping cream and cook for 3 to 5 minutes, stirring occasionally, until the cream has slightly thickened.
- Remove the skillet from the heat. Stir in 1/2 cup of the panko bread crumbs and 1/4 cup of the Parmesan cheese.
- Transfer the vegetable mixture to the prepared baking dish and spread it evenly.
- Sprinkle the remaining 1/2 cup panko and 1/4 cup Parmesan evenly over the casserole.
- Bake uncovered for 8 to 10 minutes, or until the casserole is bubbling and the topping is golden brown.
