Description

Zucchini Alfredo Noodles are an easy, creamy, low-carb alternative to traditional Alfredo pasta. Fresh spiralized zucchini is quickly sautéed and coated with a rich sauce made from cream cheese, sour cream, and Parmesan cheese for a satisfying gluten-free and vegetarian meal or side dish.

  • 1 pound zucchini, spiralized into noodles
  • 1 tablespoon olive oil
  • 1 ounce cream cheese, cubed and softened
  • 1 tablespoon sour cream
  • 1/4 cup freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Additional grated Parmesan cheese, optional for serving
  • Fresh parsley, optional for garnish


Instructions

  1. Use a spiralizer or vegetable peeler to turn the zucchini into noodles. Gently pat the zucchini noodles dry to remove excess moisture.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the zucchini noodles and sauté for about 5 minutes, stirring occasionally, until they begin to soften but are not overly tender.
  4. Add the cubed cream cheese, sour cream, and grated Parmesan cheese to the skillet.
  5. Stir continuously for about 5 minutes, allowing the cheeses to melt and combine into a creamy Alfredo sauce that thoroughly coats the zucchini noodles.
  6. Season with salt and black pepper to taste.
  7. Remove from the heat and serve immediately with additional Parmesan cheese and fresh parsley, if desired.

Notes

  • Pat the zucchini noodles dry before cooking to prevent the Alfredo sauce from becoming watery.
  • Do not overcook the zucchini because it will continue to soften from residual heat.
  • Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
  • The sauce is designed to cling closely to the zucchini noodles rather than leave a large amount of excess sauce.
  • Double the cream cheese, sour cream, and Parmesan if you prefer extra Alfredo sauce.
  • Store leftovers in an airtight container in the refrigerator for 2 to 3 days.
  • Reheat leftovers gently in a skillet on the stovetop.
  • Freezing is not recommended because zucchini can release excess moisture after thawing.
