Description

Zucchini and Eggplant Moussaka is a Mediterranean-inspired vegetarian casserole made with layers of roasted zucchini and eggplant, a savory tomato and herb sauce, creamy almond-flour béchamel, fresh parsley and mint, and a golden Parmesan topping. It is hearty, flavorful, lower in carbohydrates than traditional moussaka, and perfect for a comforting family dinner.

  • 2 medium zucchini, sliced
  • 1 medium eggplant, sliced
  • 4 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons almond flour
  • 1 cup unsweetened almond milk
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt, for the béchamel
  • 1 large egg, beaten
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Arrange the sliced zucchini and eggplant in a single layer on the baking sheets. Brush both sides with about 2 tablespoons of olive oil and season lightly with salt and black pepper.
  3. Roast the vegetables for 20-25 minutes, flipping halfway through, until tender and lightly browned. Remove from the oven and set aside.
  4. Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook for 3-4 minutes, until softened and fragrant.
  5. Add the diced tomatoes, oregano, basil, salt, and black pepper. Simmer for 15-20 minutes, stirring occasionally, until the tomato sauce has thickened.
  6. To prepare the béchamel, melt the butter in a small saucepan over medium heat. Whisk in the almond flour and cook for 1-2 minutes, stirring continuously.
  7. Gradually whisk in the almond milk. Add the nutmeg and 1/4 teaspoon salt. Cook for 5-7 minutes, whisking frequently, until the sauce has thickened enough to coat the back of a spoon.
  8. Remove the béchamel from the heat and allow it to cool slightly. Gradually whisk in the beaten egg until smooth.
  9. Arrange the roasted zucchini and eggplant in a 9×13-inch baking dish. Spread the tomato sauce evenly over the vegetables, then sprinkle with the chopped parsley and mint.
  10. Pour the béchamel sauce evenly over the casserole and spread it gently to the edges. Sprinkle the Parmesan cheese over the top.
  11. Bake for 25-30 minutes, until the top is golden brown and the sauce is bubbling around the edges.
  12. Remove from the oven and let the Zucchini and Eggplant Moussaka rest for at least 10 minutes before slicing and serving.

Notes

  • Roast the zucchini and eggplant before assembling the moussaka to reduce excess moisture and prevent a watery casserole.
  • Do not overcrowd the vegetables on the baking sheets; use two trays or roast in batches if necessary.
  • Simmer the tomato sauce until noticeably thick so it does not release too much liquid during baking.
  • Let the béchamel cool slightly before adding the egg to reduce the risk of scrambling it.
  • Allow the baked moussaka to rest for at least 10 minutes before cutting so the layers can set.
  • For extra flavor, add roasted mushrooms or bell peppers, or combine Parmesan with mozzarella for a cheesier topping.
