Description

Easy zucchini and onion fritters made with grated zucchini, Spanish onion, chickpea flour, and olive oil. These crispy golden fritters are naturally gluten-free, dairy-free, egg-free, and vegan, with tender centers and a savory flavor that works well for lunch, dinner, snacks, or meal prep.


Ingredients

  • 400 g zucchini (about 3-4 medium zucchini)
  • 100 g Spanish onion (about 1/2 small onion)
  • 1 teaspoon salt flakes, plus extra for serving
  • 1 cup (110 g) chickpea flour (besan)
  • 1 teaspoon baking powder
  • 3 tablespoons olive oil


Instructions

  1. Coarsely grate the zucchini and onion into a large mixing bowl.
  2. Sprinkle with 1 teaspoon salt flakes, stir well, and gently squeeze the vegetables with your hands. Let the mixture rest for 5-10 minutes so the zucchini and onion release their natural moisture.
  3. Sprinkle the chickpea flour over the vegetables, breaking up any lumps as you add it.
  4. Add the baking powder and stir with a spatula until everything is evenly combined. The mixture should resemble thick pancake batter. If it seems too loose, add another tablespoon of chickpea flour.
  5. Heat about two-thirds of the olive oil in a frying pan over medium to medium-high heat until the oil begins to shimmer.
  6. Drop heaped tablespoons of the fritter mixture into the hot pan, leaving space between each fritter.
  7. Cook until the bottoms are golden and firm, then flip and cook the second side until golden brown and cooked through.
  8. Transfer the cooked fritters to kitchen towel to drain and sprinkle with a little extra salt while hot.
  9. Repeat with the remaining batter, adding the rest of the olive oil to the pan as needed.
  10. Serve immediately while crisp, or cool completely before refrigerating or freezing.

Notes

  • Allow the salted zucchini and onion to rest before adding the chickpea flour because the released vegetable liquid helps form the batter.
  • If the batter is too wet, add chickpea flour 1 tablespoon at a time until it reaches a thick pancake-batter consistency.
  • For extra vegetables, add about 1/2 cup thawed and drained peas or corn, or try grated carrot, sweet potato, pumpkin, or beetroot.
  • For more flavor, add about 1 teaspoon curry powder, za’atar, or smoked paprika.
  • Do not overcrowd the pan, as this can lower the temperature and prevent the fritters from becoming crisp.
  • Store cooked fritters in an airtight container in the refrigerator for 4-5 days.
  • Fritters can be frozen, thawed overnight in the refrigerator, and reheated on a lined tray in a cold oven set to 160°C for 10-15 minutes.
