Description

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9-by-5-inch loaf pan with vegetable oil.
  2. In a medium bowl, sift or whisk together the flour, baking soda, baking powder, kosher salt, and cinnamon until evenly combined.
  3. Grate the zucchini using the large holes of a box grater. Leave the skin on and do not squeeze or drain the zucchini.
  4. In a large bowl, stir together the eggs, vegetable oil, applesauce, granulated sugar, grated zucchini, and vanilla extract until well combined.
  5. Add the dry ingredients to the wet ingredients and gently stir just until no dry flour remains. Avoid overmixing.
  6. Pour the batter into the prepared 9-by-5-inch loaf pan and spread the top evenly.
  7. Bake for 50 to 55 minutes, or until the center is set and a toothpick or cake tester inserted into the middle comes out clean or without wet batter.
  8. Allow the Zucchini Applesauce Bread to cool in the pan briefly before transferring it to a rack. Cool before slicing for the cleanest texture.
