Description

Zucchini Baba Ganoush is a smoky, creamy zucchini spread made with broiled zucchini and garlic, then topped with a tangy goat’s milk yogurt and blue cheese sauce, buttery toasted pine nuts, lemon, chile, and za’atar. It is a bold vegetarian appetizer inspired by Middle Eastern flavors and is delicious served with warm pita or fresh vegetables.

  • 3 lb (1.4 kg) zucchini
  • 1 large garlic clove, crushed
  • 1/2 teaspoon salt, plus more to taste
  • 1/3 cup goat’s milk yogurt
  • 1/3 cup crumbled Roquefort or other blue cheese
  • 1 large egg
  • 3 tablespoons unsalted butter
  • 2 tablespoons pine nuts
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon crushed red pepper or mild chile flakes
  • 1 teaspoon za’atar
  • Warm pita or fresh vegetables, for serving


Instructions

  1. Preheat the broiler to high and position an oven rack several inches below the heat source.
  2. Place the whole zucchini on a foil-lined baking sheet and broil, turning occasionally, until the skins are blistered and darkened and the centers are completely tender, about 25 to 35 minutes depending on their size.
  3. Transfer the cooked zucchini to a colander and let them cool slightly. Allow excess liquid to drain for 10 to 15 minutes so the finished Zucchini Baba Ganoush does not become watery.
  4. Transfer the softened zucchini to a bowl. Add the crushed garlic and salt, then mash gently with a fork or potato masher. Keep the texture slightly rustic rather than blending it completely smooth.
  5. Combine the goat’s milk yogurt, crumbled blue cheese, and egg in a small saucepan. Cook over low heat, stirring constantly, until the mixture is warm, creamy, and slightly thickened. Do not allow it to boil.
  6. Melt the butter in a small skillet over medium-low heat. Add the pine nuts and cook, stirring frequently, until golden and fragrant.
  7. Remove the skillet from the heat and stir in the lemon juice and chile flakes.
  8. Spread the mashed zucchini over a shallow serving plate. Spoon the warm yogurt and blue cheese mixture over the zucchini.
  9. Drizzle the toasted pine nuts and seasoned butter over the top, then sprinkle evenly with za’atar.
  10. Serve the Zucchini Baba Ganoush warm or at room temperature with pita, flatbread, or crisp fresh vegetables.

Notes

  • Drain the broiled zucchini well because zucchini naturally contains a large amount of water.
  • Do not overblend the zucchini; gentle mashing gives the spread a thicker, silkier texture.
  • Watch the pine nuts carefully because they can burn quickly once they begin to brown.
  • Keep the yogurt sauce over low heat and avoid boiling to prevent the egg and dairy from curdling.
  • Greek yogurt can replace goat’s milk yogurt for a milder flavor.
  • Another flavorful blue cheese may be substituted for Roquefort.
