Description

This easy Zucchini Banana Cake is a wonderfully moist dessert made with ripe bananas, shredded zucchini, warm cinnamon, and semi-sweet chocolate chips. Baked in a 9 x 13-inch pan and optionally topped with cream cheese frosting, it is a simple way to use extra zucchini and overripe bananas.

  • 2 ripe bananas
  • 2 1/2 cups all-purpose flour

  • 12 tablespoons butter, melted and slightly cooled
  • 1 cup semi-sweet chocolate chips
  • Cream cheese frosting, optional


Instructions

  1. Preheat the oven to 325°F.
  2. Line a 9 x 13-inch baking dish with parchment paper and set aside.
  3. Place the shredded zucchini in a clean kitchen towel and squeeze thoroughly to remove excess moisture.
  4. Whisk together the all-purpose flour, baking powder, and ground cinnamon in a medium bowl.
  5. In a large bowl, stir the eggs and granulated sugar together until combined.
  6. Mash the ripe bananas into the egg mixture and stir until well incorporated.
  7. Gradually stir in the melted and slightly cooled butter.
  8. Add the squeezed zucchini and stir until evenly distributed.
  9. Add the flour mixture and stir just until combined. Do not overmix.
  10. Fold in the semi-sweet chocolate chips.
  11. Pour the batter into the prepared baking dish and spread it evenly.
  12. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  13. Allow the cake to cool completely before adding cream cheese frosting, if desired.
  14. Slice into 16 portions and serve.
