Instructions
- Preheat the oven to 325°F.
- Line a 9 x 13-inch baking dish with parchment paper and set aside.
- Place the shredded zucchini in a clean kitchen towel and squeeze thoroughly to remove excess moisture.
- Whisk together the all-purpose flour, baking powder, and ground cinnamon in a medium bowl.
- In a large bowl, stir the eggs and granulated sugar together until combined.
- Mash the ripe bananas into the egg mixture and stir until well incorporated.
- Gradually stir in the melted and slightly cooled butter.
- Add the squeezed zucchini and stir until evenly distributed.
- Add the flour mixture and stir just until combined. Do not overmix.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the cake to cool completely before adding cream cheese frosting, if desired.
- Slice into 16 portions and serve.

- Squeeze the shredded zucchini very well to prevent the cake from becoming overly wet or gummy.
