Ingredients
Scale
- 1 1/2 cups quick oats: Provides a soft texture and hearty base.
- 1 cup old-fashioned oats: Adds chewiness and classic oatmeal cookie texture.
- 1 cup oat flour: Helps bind the cookies and creates a tender crumb.
- 1 cup shredded zucchini: Adds moisture, nutrients, and zucchini bread flavor.
- 1/2 cup unsweetened applesauce: Provides natural sweetness and keeps cookies soft.
- 1/4 cup honey: Adds mild sweetness.
- 1/4 cup oil or melted butter: Improves richness and texture.
- 2 tablespoons ground golden flaxseed: Adds nutrition and helps bind ingredients.
- 1/2 cup chopped walnuts: Adds crunch and nutty flavor.
- 2 large eggs: Helps hold the cookie dough together.
- 1 teaspoon vanilla extract: Enhances the overall flavor.
- 2 teaspoons baking powder: Helps the cookies rise slightly.
- 1 1/2 teaspoons ground cinnamon: Adds warm zucchini bread spice.
- 1/4 teaspoon sea salt: Balances flavors.
Instructions
- Preheat the oven to 360°F and prepare two baking sheets with parchment paper or silicone baking mats.
- Shred the zucchini and squeeze out excess moisture using a clean kitchen towel to prevent soggy cookies.
- In a large bowl, combine quick oats, old-fashioned oats, oat flour, flaxseed, walnuts, cinnamon, baking powder, and salt.
- Add applesauce, honey, oil or melted butter, eggs, vanilla extract, and shredded zucchini to the dry ingredients. Mix until a thick cookie dough forms.
- Scoop the dough into portions of about two tablespoons and place them on the prepared baking sheets. Flatten each cookie slightly because they will not spread much.
- Bake for 12-14 minutes until the tops are set and lightly golden.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a cooling rack.
Notes
- Squeeze zucchini thoroughly before adding it to the dough for the best cookie texture.
- Do not overbake the cookies to keep them soft and tender.
- Mini chocolate chips, dried cranberries, or extra nuts can be added for flavor variations.
- Store cookies in an airtight container for up to 3 days at room temperature.
- Freeze baked cookies for up to 3 months for easy meal prep.
