- 1/3 cup raisins or dried cranberries
- 2 tablespoons turbinado sugar, for topping
Instructions
- Preheat the oven to 375°F. Line a standard muffin tin with paper liners and lightly spray the liners with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- In a large bowl, whisk together the maple syrup, applesauce, and melted, slightly cooled coconut oil.
- Add the eggs and vanilla extract to the wet ingredients and whisk until well combined.
- Add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
- Gently fold in the shredded zucchini, shredded carrots, coconut, and raisins or dried cranberries.
- Divide the batter evenly among the prepared muffin cups and sprinkle the tops with turbinado sugar.
- Bake for 20 to 24 minutes, or until the muffins are golden brown, the tops spring back when gently pressed, and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack and cool for about 15 minutes before serving.
Notes
- Gently squeeze excess moisture from the shredded zucchini with a paper towel, but do not wring it completely dry because some moisture helps keep the muffins tender.
- Avoid overmixing the batter, which can make the muffins dense or tough.
- Whole-wheat flour can be used instead of all-purpose flour for a heartier texture.
