Description

Moist and tender Zucchini Coconut Muffins made with fresh shredded zucchini, apple, sweetened coconut, cinnamon, and crunchy walnuts or pecans. These easy muffins are lightly sweet, freezer-friendly, and perfect for breakfast or snacks.

Instructions

  1. Preheat the oven to 350°F (175°C). Line muffin tins with cupcake liners or parchment baking cups.
  2. In a large mixing bowl, whisk together the granulated sugar, eggs, vegetable oil, and vanilla extract until thoroughly combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and ground cinnamon.
  4. Add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
  5. Gently fold in the drained shredded zucchini, finely chopped apple, sweetened coconut flakes, and chopped walnuts or pecans until evenly distributed.
  6. Divide the batter among the prepared muffin cups, filling each about two-thirds full.
  7. Sprinkle additional chopped walnuts or pecans over the tops, if desired.
  8. Bake for 17 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool briefly in the pan before transferring them to a wire rack to cool further.
  10. Serve at room temperature or warm briefly before serving. Add butter if desired.
