Ingredients
Scale
- 1 cup granulated sugar
- 3 large eggs
- 2/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 2 cups peeled and grated zucchini, excess moisture drained
- 1 large apple, peeled and finely chopped
- 3/4 cup sweetened coconut flakes
- 3/4 cup chopped walnuts or pecans
- Additional chopped walnuts or pecans for topping, optional
Instructions
- Preheat the oven to 350°F (175°C). Line muffin tins with cupcake liners or parchment baking cups.
- In a large mixing bowl, whisk together the granulated sugar, eggs, vegetable oil, and vanilla extract until thoroughly combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and ground cinnamon.
- Add the dry ingredients to the wet ingredients and mix just until combined. Do not overmix.
- Gently fold in the drained shredded zucchini, finely chopped apple, sweetened coconut flakes, and chopped walnuts or pecans until evenly distributed.
- Divide the batter among the prepared muffin cups, filling each about two-thirds full.
- Sprinkle additional chopped walnuts or pecans over the tops, if desired.
- Bake for 17 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool briefly in the pan before transferring them to a wire rack to cool further.
- Serve at room temperature or warm briefly before serving. Add butter if desired.
Notes
- Small or medium zucchini are best for baking because they contain smaller, more tender seeds.
- If using a very large zucchini, remove the mature seeds and soft inner seed chamber before grating.
- Drain the grated zucchini in a fine-mesh sieve and gently press out excess moisture to prevent dense or gummy muffins.
- Do not add more zucchini than the recipe calls for, as excess moisture can negatively affect the texture.
- Avoid overmixing the batter after adding the flour to keep the muffins soft and tender.
- The exact yield varies with muffin-cup size. Large parchment cups may yield about 18 muffins, while standard liners can yield approximately 24 to 30 muffins.
- Cool muffins completely before storing them in an airtight container.
- The muffins can be frozen for longer storage. Thaw before serving and warm briefly in the microwave if desired.
- Nutrition information is an estimate based on a yield of 24 muffins and may vary depending on brands and optional toppings.
