Description
This quick and easy Zucchini Egg Fried Rice combines fluffy leftover rice, tender zucchini, carrots, eggs, garlic, soy sauce, and green onions for a flavorful Chinese-inspired meal ready in about 20 minutes.

- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small carrot, diced
- 1 small zucchini, diced
- 2 large eggs
- 3 cups cooked white rice, preferably chilled overnight
- 1/2 teaspoon ground pepper
- 2 tablespoons soy sauce
- Salt, to taste
- 4 green onions or spring onions, thinly sliced diagonally
Instructions
- Heat the vegetable oil in a wok or large frying pan over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced carrot and zucchini and stir-fry for 2 to 3 minutes, keeping the vegetables slightly firm.
- Push the vegetables to one side of the wok. Lightly beat the eggs and pour them into the empty side of the pan.
- Allow the eggs to cook until almost set, then add the cooked rice over the eggs and vegetables.
- Add the ground pepper and soy sauce. Stir-fry everything together for 3 to 4 minutes until well combined.
- Halfway through stir-frying, season with salt to taste.
- Continue stir-frying until the rice is dry, fluffy, hot, and evenly coated with the egg and seasonings.
- Stir in the sliced green onions, turn off the heat, and serve the Zucchini Egg Fried Rice immediately.
Notes
- Day-old refrigerated rice works best because its drier texture helps prevent soggy or clumpy fried rice.
- If using freshly cooked rice, cook it with slightly less water, cool it completely, and chill it before stir-frying.
- Avoid overcooking the zucchini because it can release excess moisture and make the rice soggy.
- Prepare and measure all ingredients before cooking because fried rice cooks quickly.
- Use a large, hot wok or frying pan so the rice can fry rather than steam.
- Additional proteins such as chicken, shrimp, tofu, ham, or roasted meat may be added if desired.
