Description

This quick and easy Zucchini Egg Fried Rice combines fluffy leftover rice, tender zucchini, carrots, eggs, garlic, soy sauce, and green onions for a flavorful Chinese-inspired meal ready in about 20 minutes.


Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 1 small zucchini, diced
  • 2 large eggs
  • 3 cups cooked white rice, preferably chilled overnight
  • 1/2 teaspoon ground pepper
  • 2 tablespoons soy sauce
  • Salt, to taste
  • 4 green onions or spring onions, thinly sliced diagonally


Instructions

  1. Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrot and zucchini and stir-fry for 2 to 3 minutes, keeping the vegetables slightly firm.
  4. Push the vegetables to one side of the wok. Lightly beat the eggs and pour them into the empty side of the pan.
  5. Allow the eggs to cook until almost set, then add the cooked rice over the eggs and vegetables.
  6. Add the ground pepper and soy sauce. Stir-fry everything together for 3 to 4 minutes until well combined.
  7. Halfway through stir-frying, season with salt to taste.
  8. Continue stir-frying until the rice is dry, fluffy, hot, and evenly coated with the egg and seasonings.
  9. Stir in the sliced green onions, turn off the heat, and serve the Zucchini Egg Fried Rice immediately.

Notes

  • Day-old refrigerated rice works best because its drier texture helps prevent soggy or clumpy fried rice.
  • If using freshly cooked rice, cook it with slightly less water, cool it completely, and chill it before stir-frying.
  • Avoid overcooking the zucchini because it can release excess moisture and make the rice soggy.
  • Prepare and measure all ingredients before cooking because fried rice cooks quickly.
  • Use a large, hot wok or frying pan so the rice can fry rather than steam.
  • Additional proteins such as chicken, shrimp, tofu, ham, or roasted meat may be added if desired.
