Description

Crispy Zucchini Halloumi Fritters made with grated zucchini, carrot, sweet corn, spring onions, eggs, flour, and salty halloumi. These easy vegetable fritters are golden on the outside, tender in the center, and delicious served with lemon Greek yogurt and smoked salmon.


Ingredients

  • 2 zucchini, grated and well drained
  • 1 carrot, grated and drained
  • 1 medium can corn kernels, drained
  • 1 handful spring onions, finely sliced
  • 1 1/2 cups plain flour
  • 1/2 block halloumi, grated
  • 2 eggs
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup Greek yogurt
  • 1 squeeze fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Smoked salmon or protein of choice, for serving
  • Extra spring onions, for garnish


Instructions

  1. Grate the zucchini and carrot, then drain thoroughly. Squeeze as much excess liquid as possible from the zucchini to prevent soggy fritters.
  2. Drain the corn and finely slice the spring onions.
  3. Add the zucchini, carrot, corn, spring onions, grated halloumi, plain flour, and eggs to a large mixing bowl.
  4. Stir until the ingredients form a sticky, cohesive batter. If the mixture appears watery, drain away excess liquid or add a small amount of extra flour.
  5. Heat the extra virgin olive oil in a large frying pan over medium heat.
  6. Spoon portions of the fritter mixture into the hot pan and gently flatten each portion with the back of a spoon.
  7. Cook until the underside is golden and firm, then carefully flip and cook the second side until golden and cooked through.
  8. Mix the Greek yogurt with a squeeze of lemon juice, salt, and black pepper.
  9. Transfer the cooked fritters to serving plates and top with smoked salmon or another protein of choice.
  10. Add a dollop of lemon Greek yogurt, garnish with extra spring onions, and serve warm.

Notes

  • Drain the grated zucchini thoroughly because excess moisture can make the fritters soft or soggy.
  • Cook over medium heat so the centers cook through before the outsides become too dark.
  • Avoid overcrowding the pan; cook the fritters in batches for more even browning.
  • Do not flip the fritters too early. Wait until a golden crust has formed and they feel firm enough to turn.
  • For a gluten-free variation, substitute the plain flour with a suitable gluten-free all-purpose flour blend.
  • Serve immediately for the crispiest texture.
  • Store leftover fritters in an airtight container in the refrigerator and keep the yogurt topping separate.
