Description

Crispy baked Zucchini Hash Browns made with freshly grated zucchini, Parmesan cheese, chives, oregano, garlic powder, black pepper, and egg. These savory vegetable patties are an easy, flavorful choice for breakfast, brunch, appetizers, or a light side dish.


Ingredients

  • 2 medium zucchinis
  • Salt, to taste
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup fresh chives, chopped
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large egg


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchini using the coarse side of a box grater.
  3. Transfer the grated zucchini to a large bowl, sprinkle with salt, toss well, and let it rest for about 20 minutes so the salt can draw out excess moisture.
  4. Transfer the zucchini to a clean kitchen towel. Gather the towel around the zucchini and squeeze firmly to remove as much liquid as possible.
  5. Return the drained zucchini to a large bowl. Add the Parmesan cheese, chives, oregano, garlic powder, black pepper, and egg. Mix until thoroughly combined.
  6. Divide the zucchini mixture into 6 equal portions on the prepared baking sheet and shape each portion into an even hash brown patty.
  7. Bake for about 35 minutes, or until the Zucchini Hash Browns are set and golden brown around the edges.
  8. Remove from the oven and allow the hash browns to cool for 10 to 15 minutes so they firm up before serving.
  9. Serve warm with your favorite dipping sauce, eggs, avocado, or other breakfast and brunch sides.

Notes

  • Squeeze the grated zucchini very thoroughly after salting to prevent soggy hash browns.
  • Do not skip the 20-minute salting period because it helps draw excess water from the zucchini.
  • Parmesan cheese is naturally salty, so add extra salt cautiously.
  • Shape the patties to an even thickness so they cook and brown consistently.
  • Allow the baked patties to rest for 10 to 15 minutes before lifting them from the baking sheet; this helps them firm up.
