- 1 cup diced zucchini, peeled
- 1/3 cup raw tahini
- 2 to 3 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon sea salt, or to taste
- 1 teaspoon ground cumin
Instructions
- Peel the zucchini, then cut it into small chunks for easier blending.
- Add 1 tightly packed cup of diced zucchini to a mini food processor along with the tahini, 2 tablespoons of lemon juice, minced garlic, sea salt, and cumin.
- Secure the lid and process until the Zucchini Hummus is smooth and creamy.
- Taste the hummus and adjust the seasoning as needed. Add the remaining lemon juice for a tangier flavor or a little extra cumin if desired.
- Serve immediately with sliced vegetables, or transfer to an airtight container and refrigerate until ready to serve.
Notes
- Peeling the zucchini is optional, but it gives the hummus a lighter color and makes it resemble traditional hummus more closely.
- The consistency and flavor of tahini can vary by brand. A thick, mild raw tahini works particularly well.
- The garlic flavor becomes stronger as the hummus rests in the refrigerator, so one clove is usually enough.
- If the hummus separates during storage, stir it well before serving.
- Store Zucchini Hummus in an airtight container in the refrigerator for up to 5 days.
