Description

Zucchini Monster Cookies are soft and chewy oatmeal cookies made with finely shredded zucchini, peanut butter, chocolate chips, and candy-coated chocolates. Instructions

  2. Finely shred the zucchini. Gently blot away excessive surface moisture without squeezing it completely dry.
  3. In a large mixing bowl, beat the peanut butter, vegetable oil, brown sugar, and granulated sugar until smooth and well combined.
  4. Add the eggs and vanilla extract and mix until incorporated. Stir in the shredded zucchini until evenly distributed.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the zucchini mixture and stir just until combined.
  7. Fold in the rolled oats, chocolate chips, and candy-coated chocolate pieces without overmixing the dough.
  8. Scoop rounded portions of dough, about 2 tablespoons each, onto the prepared baking sheets, leaving approximately 2 inches between cookies.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden and set while the centers still look slightly soft.
  10. Let the Zucchini Monster Cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

  • Finely shred the zucchini so it blends smoothly into the cookie dough.
