Description

- 1/2 medium onion, finely chopped
- 1 medium zucchini, chopped
- 8 ounces baby Bella or button mushrooms, sliced
- 1 cup Arborio rice
- 3 1/2 to 4 cups chicken or vegetable stock, kept warm
- 1/2 cup dry white wine
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- 1 pinch saffron, optional
Instructions
- Heat the stock in a separate saucepan over low heat and keep it warm while preparing the risotto.
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 2 to 3 minutes, until softened and translucent.
- Add the zucchini and mushrooms. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables begin to soften and excess moisture reduces.
- Add the Arborio rice and stir for about 1 minute, coating the grains with the oil and vegetables.
- Pour in the dry white wine and cook while stirring until most of the liquid has been absorbed.
- Add about 1/2 cup of warm stock. Stir frequently and allow the rice to absorb most of the liquid before adding more stock.
- Continue adding the warm stock about 1/2 cup at a time, stirring regularly, until the rice is creamy and tender with a slight bite in the center. This should take about 18 to 22 minutes.
- Stir in the Parmesan cheese, fresh basil, salt, black pepper, and optional saffron.
- If the risotto is too thick, stir in a small amount of additional warm stock until it reaches a creamy, slightly loose consistency.
- Taste and adjust the seasoning, then serve the Zucchini Mushroom Risotto immediately while warm and creamy.

- Use Arborio rice for the best creamy risotto texture.
- Keep the stock warm throughout cooking so the temperature of the risotto remains consistent.
- Add stock gradually instead of pouring it in all at once.
