Description

Easy Zucchini Pickles made with fresh zucchini, onion, vinegar, sugar, mustard seeds, coriander, peppercorns, turmeric and chilli. These crisp, tangy and slightly sweet refrigerator pickles are perfect for burgers, sandwiches, salmon, cheese boards and roasted meats.


Ingredients

  • 400 g (14 oz) small young zucchini
  • 1 medium brown or yellow onion
  • 1 1/2 tablespoons coarse sea salt
  • 1 cup (250 ml) white vinegar, 5% acidity
  • 1/2 cup (110 g) sugar
  • 1 teaspoon whole coriander seeds
  • 2 teaspoons whole yellow mustard seeds
  • 1 teaspoon whole black peppercorns
  • 1/4 teaspoon red chilli flakes
  • 1/4 teaspoon ground turmeric


Instructions

  1. Wash and dry the zucchini, remove both ends, and slice into rounds about 1/2 cm (1/5 inch) thick.
  2. Peel the onion, cut it in half, and thinly slice into half-moons.
  3. Place the zucchini, onion and coarse sea salt in a large bowl. Cover and refrigerate for 4 hours.
  4. Transfer the zucchini and onion to a colander and drain away the excess liquid. Discard the liquid.
  5. Sterilize a 700 ml (23 fl oz) glass jar and keep it warm until ready to fill.
  6. Add the white vinegar, sugar, coriander seeds, mustard seeds, black peppercorns, chilli flakes and turmeric to a non-reactive saucepan.
  7. Heat over medium heat, stirring until the sugar completely dissolves.
  8. Once the sugar has dissolved, simmer the pickling liquid for 2 minutes.
  9. Pack the drained zucchini and onion into the warm sterilized jar.
  10. Remove the saucepan from the heat and carefully pour the hot pickling liquid and spices over the vegetables.
  11. Seal the jar immediately and allow it to cool at room temperature.
  12. Transfer the cooled jar to the refrigerator. The Zucchini Pickles can be eaten once cool, but for the best flavor, refrigerate for 24 to 48 hours before serving.

Notes

  • Use small, young zucchini for the firmest and crunchiest texture. Large zucchini may be more watery and spongy.
  • Use cooking salt or coarse sea salt rather than ordinary table salt, which is stronger by volume and may contain anti-caking agents.
  • The original recipe uses an Australian tablespoon measuring 20 ml or 4 teaspoons.
  • Use white vinegar, apple cider vinegar or white wine vinegar with 5% acidity.
  • Use a non-reactive saucepan such as stainless steel, enamel, ceramic or glass when heating the vinegar brine.
  • These are refrigerator pickles and are not intended for shelf-stable pantry storage or long-term canning.
  • Store the cooled Zucchini Pickles in the refrigerator for up to 3 months.
  • For the best developed flavor, allow the pickles to rest in the refrigerator for 24 to 48 hours before eating.
