Instructions

- Wash and shred the zucchini. Lightly squeeze out excess moisture while keeping enough liquid to maintain a moist bread texture.
- In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Mix well to evenly distribute the dry ingredients.
- In a separate large bowl, whisk together eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
- Add the shredded zucchini and crushed pineapple to the wet mixture and stir until combined.
- Gradually add the dry ingredients to the wet ingredients. Mix gently until just combined, avoiding overmixing.
- Fold in chopped nuts if using them, then pour the batter into the prepared loaf pan.
