Description

Zucchini Pizza Casserole is a hearty, cheesy, gluten-free casserole made with a shredded zucchini and cheese crust, savory ground beef, Italian-style tomato sauce, bell pepper, and melted mozzarella and cheddar. It delivers classic pizza flavor in an easy vegetable-packed dinner.

  • 4 cups shredded unpeeled zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded part-skim mozzarella cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • 1 pound 90% lean ground beef
  • 1/2 cup chopped onion
  • 1 can (15 ounces) Italian-style tomato sauce
  • 1 medium green or red bell pepper, chopped


Instructions

  1. Preheat the oven to 400°F. Place the shredded zucchini in a colander and sprinkle it with salt. Let it stand for 10 minutes, then squeeze thoroughly to remove as much excess moisture as possible.
  2. Combine the drained zucchini with the eggs, Parmesan cheese, 1 cup mozzarella, and 1/2 cup cheddar cheese.
  3. Press the zucchini mixture evenly into a greased 13×9-inch or 3-quart baking dish. Bake for 20 minutes.
  4. Meanwhile, cook the ground beef and onion in a large saucepan or skillet over medium heat until the beef is no longer pink, breaking it into crumbles as it cooks. Drain excess fat.
  5. Stir the Italian-style tomato sauce into the cooked beef and onion. Spoon the meat sauce evenly over the baked zucchini layer.
  6. Sprinkle the remaining 1 cup mozzarella and 1/2 cup cheddar cheese over the meat sauce, then top with the chopped bell pepper.
  7. Return the casserole to the oven and bake for about 20 minutes longer, or until heated through and the cheese is fully melted.
  8. Let the Zucchini Pizza Casserole rest briefly before slicing and serving.

Notes

  • Do not skip salting and squeezing the zucchini. Removing excess moisture is the most important step for preventing a watery casserole.
  • Use a clean kitchen towel or cheesecloth to wring out the shredded zucchini thoroughly.
  • Yellow summer squash can be substituted for some or all of the zucchini.
  • Italian sausage, ground turkey, or ground chicken can replace the ground beef.
  • Add pizza toppings such as pepperoni, cooked mushrooms, olives, or jalapeños for variation.
  • For a vegetarian version, omit the beef and use cooked mushrooms, cauliflower, peppers, or other vegetables.
