Description
Zucchini Potato Soup is a smooth, creamy, and comforting vegetable soup made with fresh zucchini, potato, onion, garlic, vegetable stock, and parsley. It is naturally vegan, gluten-free when prepared with suitable stock, easy to make, and ideal for lunch, dinner, meal prep, or freezing.

- 700 g (1.5 lb) zucchini, cut into approximately 2 cm (1 inch) rounds
- 1 medium brown or yellow onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 1 large potato, peeled and cut into approximately 1 cm (1/2 inch) cubes
- 2 1/4 cups (560 ml) vegetable stock
- 2 tablespoons fresh flat-leaf parsley, roughly chopped
- Sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the vegetables by roughly chopping the onion and garlic, slicing the zucchini, and peeling and cubing the potato.
- Heat the extra virgin olive oil in a large saucepan over medium heat.
- Add the zucchini, potato, onion, and garlic. Cook for about 5 minutes, stirring regularly to prevent the garlic from burning.
- Pour in the vegetable stock and bring the mixture to a gentle simmer.
- Cook for 12 to 15 minutes, or until the zucchini and potato are completely tender when pierced with a fork.
- Add the fresh parsley and stir to combine.
- Blend the soup with an immersion blender until completely smooth and creamy.
- Check the consistency and add a little extra stock if the soup is too thick.
- Season with sea salt and freshly ground black pepper to taste, then serve warm with your preferred garnish.
Notes
- Use a starchy or all-purpose potato for the creamiest texture.
- Make sure the potato and zucchini are completely tender before blending to avoid a grainy or lumpy soup.
- Chicken stock can replace vegetable stock if the soup does not need to remain vegan or vegetarian.
- Add the parsley just before blending to help preserve its fresh flavor and color.
- For extra richness, top the soup with cream, Greek yogurt, grated Parmesan, toasted seeds, or crispy bacon if suitable for your diet.
- If using a countertop blender with hot soup, work carefully in small batches and allow steam to escape according to the blender manufacturer’s instructions.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freeze cooled soup in freezer-safe containers for up to approximately 3 months.
