Description
Crispy Zucchini Samosas filled with tender zucchini, onion, garlic, ginger, and warm Indian-inspired spices. These baked vegetable samosas make an easy appetizer, snack, or light meal served with chutney or yogurt sauce.

- 2 medium zucchini, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon olive oil or vegetable oil
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper, optional
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 12 samosa wrappers or phyllo pastry sheets
- 2 tablespoons melted butter or oil, for brushing
Instructions
- Wash and grate the zucchini. If it is very watery, lightly squeeze out some of the excess moisture using a clean kitchen towel.
- Heat the olive oil or vegetable oil in a skillet over medium heat. Add the chopped onion and cook for 3 to 4 minutes, until softened.
- Add the garlic and ginger and cook for about 30 seconds, stirring until fragrant.
- Stir in the curry powder, cumin, coriander, cayenne pepper, salt, and black pepper. Cook for another 30 seconds to release the aroma of the spices.
- Add the grated zucchini and cook uncovered for 6 to 8 minutes, stirring occasionally, until tender and most of the excess moisture has evaporated.
- Remove the filling from the heat and allow it to cool completely before assembling the samosas.
- Place a small spoonful of zucchini filling onto each samosa wrapper. Fold into a triangle and seal the edges according to the wrapper package directions.
- Arrange the Zucchini Samosas on a lined baking sheet and lightly brush the tops with melted butter or oil.
- Bake at 400°F (200°C) for 15 to 20 minutes, turning once if needed, until crisp and golden brown.
- Let the samosas cool for a few minutes before serving with mint chutney, tamarind chutney, mango chutney, or yogurt sauce.
Notes
- Cook the zucchini filling until excess liquid has evaporated to prevent soggy samosas.
- Allow the filling to cool completely before adding it to the pastry.
- Do not overfill the wrappers, as this can cause them to split during cooking.
- For a heartier filling, add cooked potato or green peas.
- For extra heat, increase the cayenne pepper or add finely chopped fresh chili.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in an oven or air fryer for the crispiest texture.
