Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until smooth.
  5. Gradually mix in dry ingredients alternating with milk until combined.
  6. Scoop tablespoon-sized dough onto baking sheet, spacing 2 inches apart.
  7. Bake for 8–10 minutes until edges are lightly golden, then cool completely.
  8. Whip heavy cream, powdered sugar, and vanilla until soft peaks form.
  9. Prepare pudding mix with milk, then fold into whipped cream.
  10. Spread or pipe filling onto one cookie and sandwich with another.
  11. Heat heavy cream and pour over chocolate chips, stirring until smooth.
  12. Drizzle or dip cookies with ganache and let set before serving.
