Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate the zucchini using a box grater to your preferred texture.
- Place the shredded zucchini in a clean towel or sieve and squeeze out as much moisture as possible.
- Transfer the drained zucchini to a mixing bowl and add breadcrumbs, egg, shredded cheese, diced onion, garlic powder, and salt.
- Mix thoroughly until all ingredients are well combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly to form fritters.
- Bake for 18–22 minutes or until the edges turn golden brown.
