- 1 tablespoon (6g) instant coffee granules – for coffee flavor

- 1 teaspoon (5ml) vanilla extract – enhances flavor
Instructions
- Preheat oven to 325°F (160°C) and place 6 ramekins in a deep baking dish.
- In a saucepan, heat 3/4 cup sugar and 1/4 cup water over medium heat until it turns deep amber. Pour immediately into ramekins and swirl to coat bottoms. Let it set.
- In another saucepan, combine milk, cream, sugar, and coffee granules. Heat gently until hot but not boiling, stirring to dissolve.
- In a bowl, whisk eggs and vanilla extract until smooth.
- Slowly pour the hot milk mixture into the eggs while whisking continuously to prevent curdling.
- Strain the mixture through a sieve for a smooth custard.
- Pour custard evenly into caramel-coated ramekins.
- Add hot water to the baking dish until halfway up the ramekins. Cover loosely with foil.
- Bake for 50–60 minutes until set but slightly jiggly in the center.
- Remove from water bath, cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Run a knife around edges and invert onto plates before serving.
