- 12 lasagna noodles (about 250g)
- 1 lb (450g) large shrimp, peeled and deveined
- 4 tbsp (56g) unsalted butter
- 4 cloves garlic, minced
- 1/4 cup (60ml) white wine or chicken broth
- 1/2 tsp crushed red pepper flakes (optional)
- 2 cups (480g) ricotta cheese
- 1/2 cup (50g) grated Parmesan cheese
- 1 large egg
- 1 tbsp fresh parsley, chopped
- 2 cups (200g) shredded mozzarella cheese
- Salt and pepper to taste
- 4 tbsp (56g) unsalted butter (for sauce)
- 2 cloves garlic, minced (for sauce)
- 1 tbsp (8g) all-purpose flour
- 1 1/2 cups (360ml) heavy cream
- 1/4 cup (25g) grated Parmesan cheese (for sauce)
- 1 tbsp (15ml) fresh lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook lasagna noodles in salted boiling water until al dente, then drain and set aside.
- In a skillet, melt 4 tbsp butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
- Deglaze the pan with white wine or chicken broth and simmer for 2–3 minutes. Set aside.
- In a bowl, mix ricotta cheese, Parmesan cheese, egg, parsley, salt, and pepper until smooth.
- In a saucepan, melt remaining butter and sauté garlic. Add flour and cook for 1–2 minutes to form a roux.
- Gradually whisk in heavy cream and cook until thickened, about 5 minutes.
- Stir in Parmesan cheese, lemon juice, salt, and pepper, then remove from heat.
- Spread a thin layer of sauce in the baking dish. Add a layer of noodles, ricotta mixture, shrimp, and sauce.
- Repeat layers, finishing with noodles, remaining sauce, and mozzarella cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes until golden and bubbly.
- Let rest for 10 minutes before slicing and serving.
Notes
- Do not overcook shrimp as they will continue cooking in the oven.
- Use freshly grated Parmesan for best flavor and melting.
- Let the lasagna rest before slicing to keep layers intact.
- Add spinach or mushrooms for extra nutrition and flavor.
- Store leftovers in the refrigerator for up to 3 days.
