No Bake Fireworks Oreo Cheesecake Bars are creamy, festive dessert bars made with a buttery Oreo crust, rich no-bake cheesecake filling, crunchy Oreo cookies, and colorful patriotic toppings. Perfect for Fourth of July parties, summer cookouts, and holiday gatherings, these easy cheesecake bars deliver delicious cookies-and-cream flavor with a fun popping candy surprise.

Ingredients

Scale
  • 25 Golden Oreo cookies, crushed
  • 6 tablespoons butter, melted
  • 4 drops red gel food coloring (optional)
  • 32 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping or Cool Whip
  • 16 Oreo cookies, roughly chopped
  • 1 package red and blue Pop Rocks candy
  • 1/4 cup patriotic red, white, and blue sprinkles
  • 6 additional Oreo cookies, crushed for topping

Instructions

  1. Crush the Golden Oreo cookies into fine crumbs using a food processor or rolling pin.
  2. Mix the cookie crumbs with melted butter and red food coloring until fully combined.
  3. Press the crust mixture firmly into the bottom of a 9×13-inch baking dish.
  4. Freeze the crust for 20 to 30 minutes until firm.
  5. In a large mixing bowl, beat softened cream cheese until smooth and creamy.
  6. Add powdered sugar and vanilla extract, then mix until combined.
  7. Fold in the whipped topping gently until fluffy.
  8. Stir in the chopped Oreo cookies and Pop Rocks candy.
  9. Spread the cheesecake filling evenly over the chilled crust.
  10. Cover and refrigerate for at least 4 hours or overnight until set.
  11. Top with crushed Oreos, patriotic sprinkles, and additional Pop Rocks before serving.
  12. Slice into bars and serve chilled.

Notes

  • Use room temperature cream cheese for a smooth filling.
  • Do not overmix the whipped topping to keep the cheesecake light and fluffy.
  • Add Pop Rocks just before serving to maintain their popping effect.
  • Line the baking dish with parchment paper for easier removal and cleaner slices.
  • Store leftovers covered in the refrigerator for up to 5 days.
  • You can freeze the cheesecake bars for up to 2 months.
