Ingredients
Scale
- 1 pound ground beef
- 1 small onion, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons taco seasoning
- 1 teaspoon garlic powder
- 1 cup long grain white rice
- 1 1/2 cups beef broth
- 1 (15-ounce) can corn, drained
- 8 ounces tomato sauce
- 1/2 cup salsa
- 1 cup shredded cheddar cheese
Instructions
- In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and no longer pink. Season with salt and black pepper. Drain excess grease if necessary.
- Sprinkle the taco seasoning and garlic powder over the cooked beef mixture. Stir well to evenly coat the meat with the seasonings.
- Add the uncooked rice, beef broth, drained corn, tomato sauce, and salsa to the skillet. Stir until fully combined.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
- Sprinkle the shredded cheddar cheese evenly over the casserole. Cover again and let sit for 2 to 3 minutes until the cheese is melted.
- Serve hot with optional toppings like sour cream, cilantro, avocado, or jalapeños.
Notes
- Use long grain white rice for the best texture and even cooking.
- Add extra broth if the rice needs more cooking time.
- Swap ground beef for ground turkey or chicken for a lighter version.
- Use spicy salsa or jalapeños for extra heat.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat with a splash of broth or water to keep the rice moist.
