Description

One Pot Mexican Rice Casserole is a hearty and easy weeknight dinner made with seasoned ground beef, tender rice, sweet corn, salsa, tomato sauce, and melted cheese. This flavorful one-pan meal delivers comforting Tex-Mex flavors with minimal prep and cleanup, making it perfect for busy families.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons taco seasoning
  • 1 teaspoon garlic powder
  • 1 cup long grain white rice
  • 1 1/2 cups beef broth
  • 1 (15-ounce) can corn, drained
  • 8 ounces tomato sauce
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and no longer pink. Season with salt and black pepper. Drain excess grease if necessary.
  2. Sprinkle the taco seasoning and garlic powder over the cooked beef mixture. Stir well to evenly coat the meat with the seasonings.
  3. Add the uncooked rice, beef broth, drained corn, tomato sauce, and salsa to the skillet. Stir until fully combined.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 18 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.
  5. Sprinkle the shredded cheddar cheese evenly over the casserole. Cover again and let sit for 2 to 3 minutes until the cheese is melted.
  6. Serve hot with optional toppings like sour cream, cilantro, avocado, or jalapeños.

Notes

  • Use long grain white rice for the best texture and even cooking.
  • Add extra broth if the rice needs more cooking time.
  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Use spicy salsa or jalapeños for extra heat.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat with a splash of broth or water to keep the rice moist.
