Description

This Pot Chili recipe is a hearty, flavorful meal made with ground beef, beans, tomatoes, and bold spices. Prepared in a pressure cooker, it delivers rich, comforting flavor in about 30 minutes, making it perfect for busy weeknights, meal prep, or family gatherings.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup beef broth (or chicken broth)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: shredded cheddar cheese, sour cream, chopped green onions, fresh cilantro for serving


Instructions

  1. Set the pressure cooker to the Sauté function. Cook the ground beef, onion, and bell pepper for 5–7 minutes until the beef is browned and the vegetables are softened. Drain excess fat if needed.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, salt, and black pepper until well combined.
  4. Scrape the bottom of the pot to remove any browned bits.
  5. Secure the lid, set the valve to Sealing, and cook on High Pressure (Manual/Pressure Cook) for 15 minutes.
  6. Allow the pressure to release naturally for 10 minutes, then carefully perform a quick release for any remaining pressure.
  7. Open the lid, stir the chili, taste, and adjust the seasoning if needed.
  8. Serve hot with shredded cheese, sour cream, green onions, cilantro, or your favorite toppings.

Notes

  • Brown the meat thoroughly for deeper flavor.
  • Scrape the bottom of the pot before pressure cooking to avoid a burn warning.
  • For a thicker chili, simmer using the Sauté function for a few extra minutes after cooking.
  • Store leftovers in the refrigerator for up to 4 days.
