Description

Creamy Red White and Blue Cheesecake Bars with a chocolate Oreo crust, festive swirled cheesecake filling, whipped topping, and patriotic sprinkles.

Ingredients

Scale
  • 2 1/2 cups chocolate Oreo crumbs
  • 1/4 cup granulated sugar
  • 10 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • Red food coloring, as needed
  • Blue food coloring, as needed
  • 1 cup whipped topping, for garnish
  • 2 tablespoons red, white, and blue sprinkles, for garnish

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the Oreo crumbs, 1/4 cup sugar, and melted butter until evenly coated.
  3. Press the crust mixture firmly into the prepared baking dish in an even layer.
  4. Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly.
  5. Reduce the oven temperature to 325°F.
  6. In a large bowl, beat the softened cream cheese until smooth and creamy.
  7. Add the sour cream and mix until fully combined.
  8. Mix in 1 cup sugar and vanilla extract until smooth.
  9. Add the eggs one at a time, mixing gently after each addition until combined.
  10. Divide the cheesecake batter evenly into 3 bowls.
  11. Tint one bowl red, one bowl blue, and leave the third bowl plain.
  12. Spoon alternating dollops of red, white, and blue batter over the cooled crust.
  13. Gently swirl the colors with a knife, being careful not to overmix.
  14. Bake for 35 to 40 minutes, or until the edges are set and the center is slightly jiggly.
  15. Remove from the oven and cool completely at room temperature.
  16. Refrigerate for at least 4 hours or overnight.
  17. Slice into bars, then top with whipped topping and sprinkles before serving.

Notes

  • Use softened cream cheese for the smoothest cheesecake filling.
  • Do not overmix the batter after adding the eggs to help prevent cracking.
  • Chill overnight for the best texture and cleanest slices.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze in a freezer-safe container for up to 2 months and thaw overnight in the refrigerator.
