Description

Strawberry Blondies are soft, chewy dessert bars made with a rich brown sugar base, fresh strawberries, and sweet white chocolate chips. These easy homemade blondies are perfect for summer gatherings or a quick fruity treat.

Ingredients

Scale
  • 1 1/2 cups fresh strawberries, chopped (about 225g)
  • 1 cup salted butter, melted (227g)
  • 1 cup light brown sugar, packed (200g)
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour (260g)
  • 2 tablespoons malted milk powder (optional)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (93g)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Wash, dry, and chop strawberries into small pieces and set aside.
  3. Melt the butter in a large bowl, then whisk in brown sugar and vanilla extract until smooth.
  4. Allow the mixture to cool slightly, then whisk in the egg until fully combined.
  5. In a separate bowl, mix flour, baking powder, salt, and malted milk powder.
  6. Add dry ingredients to wet ingredients and stir until a thick batter forms.
  7. Fold in chopped strawberries and white chocolate chips evenly.
  8. Spread batter into prepared pan and smooth the top.
  9. Bake for 35–40 minutes until edges are set and the top is golden.
  10. Cool completely before slicing into bars and serving.

Notes

  • Do not overbake; the center should remain slightly soft for a chewy texture.
  • Pat strawberries dry to avoid excess moisture in the batter.
  • Use a metal baking pan for even baking results.
  • Blondies will firm up as they cool after baking.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 3 months and thaw before serving.
