Description

Instructions

  1. Wash, hull, and finely chop the strawberries, then pat them dry thoroughly to remove excess moisture.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth and fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined without overmixing.
  6. Gently fold in the chopped strawberries, distributing them evenly through the dough.
  7. Scoop the dough into portions and place them on a lined baking sheet, spacing them apart.
  8. Chill the dough for 20–30 minutes to help maintain shape during baking.
  9. Preheat the oven to 350°F (175°C) and bake for 12–15 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. Optionally dust with powdered sugar or drizzle glaze before serving.
